I think you dont want to log, i think you want to make diagrams :)
but if you want to log, you have to activate every device channel:
in the pic, the option "protokolliert":
this is im menu setup, devices.
If you want to make diagrams, this is in menu status-diagrams.

Thanks Zdenko - i can't find the parameters you are telling me - in device-settings there are no such parameter. In the overview though, i can see the tick-box, but it is dimmed and cannot be changed:
